In a large bowl, combine the ground beef with all spices, vinegar, and water. Mix until fully incorporated and slightly sticky.
Form the mixture into a firm log shape. Wrap tightly in parchment paper or use a natural casing if desired.
Place on a wire rack set over a baking tray. Bake in a preheated oven at 175°F (80°C) for about 2 hours or until the internal temperature reaches 160°F (71°C).
Remove from oven and let cool completely. Slice thinly once cooled.
Store in an airtight container in the fridge for up to 5 days, or freeze for up to 2 months.
