Ingredients
  

  • 2 cups black beans cooked, or 1 can, rinsed and drained
  • 1 medium red onion finely chopped
  • 3 garlic cloves minced
  • 2 celery stalks diced
  • 2 tablespoons olive oil for sautéing

Flavor Enhancers

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder adjust to taste
  • 1 lime Juice

Broth and Add-ins

  • 4 cups vegetable or chicken broth
  • 1 cup shredded purple cabbage optional, for color and added nutrients

Toppings

  • ½ avocado diced
  • Fresh cilantro chopped
  • ¼ cup sour cream or a vegan alternative
  • ½ cup crushed tortilla chips for crunch

Instructions
 

Prep the Ingredients

  • Chop the red onion, mince the garlic, and dice the celery.
  • Rinse the black beans (unless you’re using dried ones—make sure they’re cooked!).
  • Gather your spices—cumin, smoked paprika, and chili powder—because things are about to get tasty!

Sauté the Aromatics

  • Heat up your olive oil in a pot and throw in the onion, garlic, and celery. Let them cook until they start smelling amazing.

Add Beans and Spices

  • Now, toss in your black beans, the spices, and pour in the broth. Stir it all up and let it simmer like it’s soaking in the flavors. Get comfy, this part only takes about 20 minutes.

Blend (Optional)

    Finish with Lime and Serve
